Ingredients
For the Macaron Shells:
- 1 cup (100g) almond flour
- 1 3/4 cups (200g) powdered sugar
- 3 large egg whites (room temperature)
- 1/4 cup (50g) granulated sugar
- 1/2 teaspoon lavender extract
- Purple gel food coloring (optional)
For the Lavender Honey Buttercream Filling:
- 1/2 cup (115g) unsalted butter (softened)
- 2 cups (240g) powdered sugar
- 2 tablespoons honey
- 1 teaspoon lavender extract
- 1-2 tablespoons heavy cream (as needed)
Instructions
1. Prepare the Macaron Shells:
- Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
- In a mixing bowl, sift together the almond flour and powdered sugar until well combined. Set aside.
- In a clean, dry bowl, beat the egg whites with a mixer on medium speed until foamy. Gradually add the granulated sugar and continue to beat until stiff peaks form and the mixture is glossy.
- Gently fold in the lavender extract and food coloring (if using) into the egg whites.
- Carefully add the almond flour mixture to the egg whites in three additions, folding gently until the mixture is smooth and flows like lava. Be cautious not to overmix.
- Transfer the macaron batter to a piping bag fitted with a round tip. Pipe small circles (about 1.5 inches in diameter) onto the prepared baking sheets, leaving space between each macaron.
- Tap the baking sheets gently on the counter to release any air bubbles. Let the macarons sit at room temperature for 30-60 minutes until a skin forms on the surface.
- Bake the macarons in the preheated oven for 15-18 minutes, or until they are firm and can easily lift off the parchment paper. Allow them to cool completely on the baking sheets.
2. Make the Lavender Honey Buttercream Filling:
- In a medium bowl, beat the softened butter until creamy and smooth.
- Gradually add the powdered sugar, beating on low speed until combined. Increase the speed and beat until fluffy.
- Add the honey, lavender extract, and a tablespoon of heavy cream. Beat until well combined. If the buttercream is too thick, add more cream, one teaspoon at a time, until you reach your desired consistency.
3. Assemble the Macarons:
- Pair the macaron shells by size. Spread or pipe a dollop of the lavender honey buttercream onto the flat side of one macaron.
- Top with another macaron shell, flat side down, and gently press together.
- Repeat until all macarons are filled. Allow them to rest in an airtight container in the refrigerator for at least 24 hours to develop the flavors.
4. Serve:
Bring the macarons to room temperature before serving. Enjoy the delicate flavors of lavender and honey in each delightful bite!
Notes:
- Macarons can be stored in an airtight container in the refrigerator for up to 5 days.
- For a stronger lavender flavor, consider using culinary lavender in the buttercream filling.
These Lavender Honey Macarons are sure to impress with their delicate texture and enchanting flavor profile. Happy baking!
