  • Salt and pepper to taste
  • ¼ cup crumbled feta cheese
  • ¼ cup shelled pistachios, roughly chopped

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C).
  2. Toss the Carrots: In a large bowl, combine the baby carrots with olive oil, honey, ground cumin, ground coriander, cinnamon, salt, and pepper. Toss until the carrots are well coated.
